For pi day this thursday...we are having an event at work.
I need ideas. I was thinking of an apple with maybe a crumble topping...

Eclair pie.
Bake an empty pie shell, cool.
Make a pastry cream, put in pie shell, let set and cool.
Make a simple ganache- equal parts volume semisweet chocolate chips and heavy cream gently microwaved and stirred until smooth, spread on top and cool the whole thing.

on the weekend I made an apple-blackberry crisp... it is so good... I almost forgot how delicious apple and blackberry are together, so that's my vote
you could make the crisp and call it a "crustless" apple-blackberry pie with a crumb topping...
although, that pie RA posted looks really good... and more likely to win potluck
