I made this for the long weekend with soy chorizo and cassava flour tortillas, it was so good

It was crazy good and could feed a small army. The tortillas stuck to the bottom so maybe spray it or coat w salsa first.

I am thinking home fries. My favorite place does a burrito with chorizo and home fries and eggs.
I know you don't use actual meat. I like the soft chorizo but can't seem to find that kind at the store. I think I may be looking for the wrong thing.

I bought these, but have made them in the past following the cassava flour tortilla recipe on the bag for Ottos cassava flour.
