Does anyone know of a good carb-free or low-carb dessert recipe? My son's birthday is tomorrow, and he's on a no-carb diet (and doing very well with it). It would have to be simple, because we are never mistaken for anyone named Emeril or Giada. Thanks.
i thought it said crab free and was like, wtf is there crab in your dessert? No carb as in no flour, or no carbs as in no carbs in fruit, beans, etc? There is some good avocado chocolate pudding i made and some flourless black bean brownies. Something like that? Chocolate mousse is no flour traditionally.
you can make cheesecake pretty low carb. Chocolate mousse. Or pot de chocolat
I was going to suggest cheesecake. Or I think the Atkins diet has a recipe for chocolate bars where you melt VERY dark chocolate over pistachio nuts and make carb-free chocolate bark.
For either of these, you can likely google or just google "Atkins dessert recipes"
berries with whipped cream and dark chocolate shavings on top? Or those cream cheese stuffed strawberries?
Thank you everyone! I'll look into these and come up with something. Much appreciated! :)
I suggest an ice cream sundae with a sparkler on the top.
Well, I've come to realize that a) my son doesn't like cheesecake, b) he won't eat fruit, and c) he won't eat ice cream. Apparently, natural carbs and sugar are no-nos in his diet. I give him credit for sticking to this diet, which consists mostly of proteins and vegetables, but it makes it difficult to celebrate his birthday. So, were going to buy a hunk of locally made mozzarella, and stick a candle in it, while the rest of us will enjoy a slice of ice cream birthday cake.
Thanks again for the suggestions! :)
why is he following this diet?

Well, he was extremely heavy, and has probably lost over 100 pounds in less than a year. He looks good now, and feels great, and wants to continue on it. I told him he should just take up runnning, but he isn't a fan of any physical activity, unlike his old man...

Yes- that's great!
And I guess, less mean and more inaccurate. You have a lot of taste in fruits, veggies, meats and fishes.
Just not a ton of traditional dessert options.
That's a great loss and impressive that he has stuck with such a strict diet - especially if he is not a fan of fruit!

Yes, I could never do it - that's why I run!
