the mint was the wrong flavor when eaten with the other ingredients.
I pinned it and one of my friends already made it and loved it, planning on making it tomorrow. Going to throw the beans in the preasure cooker today.

The grocery store by us serves this incredible kale salad and I found a bunch of copycat recipes online that I modify to my tastes, and I've looked at the ingredients list to make sure I include everything they do. It's pricey to get it by the pound, which is I just make it.
Basically it's:
kale
pumpkin seeds
almonds chopped up, or buy the sliced ones.
craisins
crystallized ginger, minced
Make a dressing of:
oil, soy sauce, sesame oil, rice vinegar, honey, shallots, orange juice, salt and pepper to taste.
There are a few exact recipes online, I modify them to how I like the flavors. Search "Central Market Kale Salad."
It was ok, not bad, but not knock my socks off, sunflower seeds helpe and diced acocado would have been good if mine were ripe
