Oh, that looks good! Chicken thighs are the best.
The most recent thing I made was a tortellini soup. Easy peasy. Saute onion, carrot, celery, garlic. Add chicken broth and water in about a 2:1 ratio. Bring to a boil and add tortellini (I used cheese tortellini from the refrigerated section) and cook till done. Stir in baby spinach, s&p, and grate some parm on top.
