I am now eating more sandwiches for lunch, but want some alternatives to chicken/turkey cold cuts and hummus... Any help?
Slices of grilled veggies...zucchini, eggplant, and red peppers, with or without a slice of good cheese. BBQ tofu. Mock chicken salad (look up a recipe). Egg salad. Peanut butter and thinly sliced apples. Figs and goat cheese. Falafel with tomato, lettuce, and tahini on pita.
I made basil aioli a few weeks ago, not sure that it's vegetarian since it has eggs. But it was great as sandwich spread.

I like mashing up chickpeas and stirring in some mayo (i use veganaise), sweet relish, dijon, salt and anything else that looks good at the moment. I let the flavors mesh a little in the fridge, then eat.
mashed avocado + veggies
white bean spread + veggies
tapenade + veggies
slices of lentil loaf/veggie loaf/bulgur loaf - i just did a quick web search, and there are many fine recipes
cashew butter + jam
ah yes, nothing isn't made better by putting avocado in your sandwich. It's great with alfalfa sprouts and cucumber, onions, and of course, hummus.

I rarely ever eat sandwiches. I like me a good salad, whether it is quinoa based, noodle based, or spinach based! I guess anything you can put on a pita or wrap :D
What about falafel? and varieties on it, i love Fat Free Vegan Blog's sweet potato falafel.
Thanks for these ideas! I am going to try some. Too bad I am not an avocado eater. I got sick from one, years and years ago, and have not touched them since.
I had bruschetta panini a few weeks ago. It had pesto for spread, layered with slice plum tomatoes and mozzarella drizzled with balsamic vinaigrette. It was very good!
