Salad dressing recipe

I have been trying for so long to make the salad dressing that you get with Greek salad. Olive oil, lemon juice, salt, garlic, maybe some oregano. Shouldn't be this hard. It's always either too lemony or too olive oil tasting. I can't get the proportions correct even though I use recipes. It never tastes or looks like the one I get in restaraunts with my Greek salad. Any tried and true recipes? Bottled Salad dressing here is meh. They have some Paul Newman ones but they're hit or miss, and they're $$$$.

I would bet the commercial dressings have some sugar in them to temper the lemon acid; also may use dried oregano and mint rather than fresh.

A friend of mine uses some red wine vinegar in addition to the lemon.

I just added a pinch of sugar to the one I made and it was a tiny bit better. Still don't like it, but it was an improvement.

2 cloves garlic, minced
1 t dried oregano
1/2 t prepared mustard
1/4 c red wine vinegar or lemon juice
1 t sea salt
1/2 t pepper
1/2 c olive oil

I made this dressing for a Greek/Israeli salad I threw together and it was perfect:

For a Middle Eastern touch, add some chips of toasted/fried pita pieces.

mustard in a jar (as opposed to powdered or seed)...
