Can someone tell me if this is a good recipe? I have never made it. Day loves it, I like it, so I wanted to try it.
If imagine I can get the ingredients here since we have lots of Asian items in the store (the tamarind paste and fish sauce). I don't know what that chili sauce is.

you can make your own sambal ulek.

you'll need red chiles, ginger root, lemongrass, garlic, vinegar, and sugar.

witchypoo

that recipe is fine, if not traditional.  she omits the egg, uses sambal, and adds ground black pepper.  but whatever.  to each their own.

I don't remember egg in the pad Thai we had in Malaysia. Is there usually egg in it?

Welp. First attempt was mostly a fail. I mean we could still eat it, but no one was finishing their plates and going back for seconds. I'm sure I bought the wrong noodles. They would not get soft for anything. I think they were too thick. We have 3000 varieties of rice sticks/rice noodles and I didn't pick the correct one.
After all of the prep work it all comes together really quickly. I'm going to try again soon with thinner noodles.

Just boil the noodles as you normally would boil noodles.  Drain them really well, then add to your pan.

I'll do that next time. I was scared to overcook them so I just did the boiling water in a bowl. That didn't work.
