Anyone make queso fundido?

Looking for a simple recipe (as far as ingredients.) My Dad loves it but the ones I am finding online have all kinds of stuff in them with lots of onions and peppers, the last two times we have ordered out they are basically cheese and chorizo.

Anything other than cheese and chorizo is personal choice.  Just follow any of them and leave out what you don't like.
