Barry, here's Prudhomme's Cajun meatloaf and hot sauce/gravy recipe (attached) directly scanned from his cookbook.  I'll find the Cajun shepherd's pie scan later.  I'm pretty sure Spawn the Elder scanned it at some point.

I really like this basic turkey meatloaf. I add in a little bit of finely shredded carrot or zucchini if I have it on hand.
