I ate a whole head of cauliflower!

It all began at lunch.  Every so often there are people outside the cafeteria where I generally eat lunch with samples of food.  I think they represent some healthy eating organization, but I'm not sure.  I always try their stuff just because it's probably harmless and it's always free.  Today it was a mock garlic mashed potato thing made with cauliflower instead of potatoes.  Holy crap it was good!  So good, that I took their flyer, which included the recipe, and swung by the grocery store after work to pick up the ingredients. 

I guess this is supposed to be a side dish, but I didn't really have anything else to eat in the house so I made myself a plate full.  And then another because the first one was so good.  And then yet another, because who wants to bag up left overs?  I have no idea what this portends, but the last time I got carried away like this it involved an entire head of cabbage.  That turned out badly, so I'm askeered.  Hold me!

But anyway, the recipe was similar to this one, but vegan-ized.  Margarine vs. butter (and less of it), no chicken stock, etc.  Damn, it was good.

That looks delish but I would expect some stomach discomfort. I haven't tried any of the roasted cauliflower recipes or the mashed or was it 'pizza' you guys talked about previously but I'm thinking of giving one of these a whirl soon.

I love cauliflower.  I have a pretty great digestive system so I might could get away with that.  Please report back tomorrow.

It would not affect me either.  I eat at least a pound of baby carrots every day, in addition to other vegetables and fruits.

I love that stuff - make it all the time, although I make no pretense of calling it mock mashed potatoes. I appreciate it for its cauliflower-ness! I use chicken broth when cooking the cauliflower, for extra flavor, and then just a little butter, salt & pepper, etc. when mashing with an immersion blender. Super simple. Seems a couple of good tricks to try from that recipe - drying the cauliflower - as the mashed finished product can be a little water - and adding cream cheese for a little more body. However you make it, mashed cauliflower is delicious!

That's one of the pitfalls with mashed cauliflower ... it goes down easy but at the end of the day, it's still cauliflower.

I once ate almost a whole heat of roasted.  My husband, realizing he only had 3 florettes wisely decided to meet a friend at our local bar.

i love cauliflower. I have a recipe i learned in grad school with mashed cauliflower and millet then cooked up into patties. Yum. I may have to make that tomorrow for me and DD :D

Well, I definitely got a bonus "cleanse." I'll keep on making this, but maybe apply a little portion control next time.
