eggplant caviar

I joined a farm co-op like organization this year.  You order a box and you get what you get.  This week I got okra (ick - I hate okra, but I'm going to try pickling it), some small tomatoes and potatoes and these cute little baby eggplant. 
So I tried eggplant caviar - I can see lots of potential.  There are too many recipes available to to post a specific one and I'll gladly try a recommended one, but this stuff is pretty good.
Anyone ever make it?  If so, what ingredients do you use?

it's similar, the recipe I used had roasted eggplant, olive oil, tomatoes, parsley, garlic, lemon juice and chili peppers.  Next time I'll ease up on the parsley.
But there are tons of variations.

I make ratatouille with eggplants. The dish seems to taste better day after day of left overs. I use a recipe that is not a classic, but with chicken thighs, sprinkled with goat cheese or feta crumble after taking it out of the oven. It's what I'm making for dinner tonight actually.

Ratatouille Chicken Thighs

Recipe By :
Serving Size : 4 Preparation Time :0:00
Categories :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
Whisk together for Balsamic-Thyme Oil
3 tablespoons balsamic vinegar
2 tablespoons olive oil
2 tablespoons fresh thyme -- chopped
2 tablespoons garlic -- minced
1 teaspoon kosher salt
1/2 teaspoon black pepper
Combine:
4 Roma tomatoes -- quartered lenghwise
1 medium zucchini -- cut 1" thick chunks
1 medium onion -- cut 2" thick chunks
1 medium yellow pepper -- cut 1" thick chunks
1 small eggplant -- cut 1" thick chunks
salt and pepper -- to taste
3 tablespoons Balsamic-Thyme Oil
Toss with; Season; Roast;
8 chicken thighs -- bone in
remaining Balsamic-Thyme Oil
Top with:
goat cheese -- crumbled


Preheat oven to 425 degrees. LIne a bking sheet with foil; coat with nonstick spray.

Whisk all ingredients for the Balsamic-Thyme Oil together in a small bowl; set aside.

Combine vegetables in a large bowl and toss with 3 T. Balsamic-Thyme Oil. Arange vegetables on one side of the perpared baking sheet.

Toss chicken with the remaining Balsamic-Thyme Oil and place on the other end of the baking sheet. Season everything with salt and pepper. Roast 45-60 minutes.

Top vegtables with goat cheese. Serve immediately.

Oooh, thank,  I got a rack of chicken thighs defrosting in the fridge to tomorrow, I will try this.

We make ratatouille with our garden veggies.
We throw in string beans too...since we have so many.
We serve it with everything from fish to pork chops.

My mother makes a mean ratatouille pie. ~swoon~

I am considering going to the produce place today to score some Japanese Eggplant (the only place i can find them for sale) and make this again.

Did you use tomatoes in that recipe? I don't think I've had peanuts and tomatoes in the same dish before.
