What can I do with a can of coconut milk?

curry! 

I tried to recreate something I'd had a restaurant.  Not bad.

Ingredients:
1 teaspoons green curry paste (could have used more or a hotter curry paste)
2 teaspoons curry powder (maybe using stuff that is 20 years old isn't the best choice)
2 1/2 tablespoons of fish sauce
1 can unsweetened coconut milk
1/2 sweet yellow onion cut small (Eric thought it could have used more)
1/2 green pepper cut small
a few carrot sticks cut small for color (because I had some)
about 2 tablespoons of sugar
pile of chicken breast cut approximately bite size (it was what I had in the fridge and I don't know how much it was)
somewhere between 3/4 and 1 cup fresh pineapple chunks
1/2 can pineapple chunks, drained (because I really really really like pineapple)

And separately, 2 cups instant rice per the instructions on the box

I put everything in the skillet and brought to a low boil and cooked at low boil around 15 minutes or so. Then added pineapple for another 5 - 10.  The fresh pineapple should have been put in sooner or cut smaller, as it was still awfully firm.  A little cornstarch might could have thickened the sauce a bit, but I didn't have any.

Serve over rice.

I'll 3rd the curries suggestion.  Add it after it's stopped cooking tho to maintain the flavor.

I don't think I love curry, but dh does. Maybe I'll try it for him to eat. I say I don't think because it's been a long time since I've had it, and I can't remember if I liked it or not.

Jamaican Red Beans and Rice

Ingredients:

1 tsp coconut oil (or canola)
1 garlic clove, crushed
1/4 cup onion, minced
1 scallion, chopped
1 sprig fresh thyme
15.5 oz can red kidney beans, rinsed and drained
2 cups uncooked long grain rice
salt and fresh ground pepper, to taste
2 1/4 cups water
13.5 oz can (1 3/4 cups) light coconut milk
1 whole scotch bonnet hot pepper (not chopped)

Directions:

In a medium heavy saucepan, heat oil over medium heat; add garlic, scallion, onion and thyme. Sauté a few minutes, then add rice, beans and stir.

Add the coconut milk, water, salt and fresh pepper and place the whole scotch bonnet pepper in the pot, stir to combine and bring to a boil.

Remove and discard the hot pepper and continue to cook the rice until almost all the liquid is absorbed and just skims the top.

Cover; reduce heat to low; simmer for 25 minutes. Remove from heat and keep covered for 10 additional minutes to allow the steam to finish cooking the rice (do not be tempted to lift the lid before that). Serve hot.

Makes 7 1/2 cups.
