Holy jeebus, that's a lot of lemons!

So, our two lemon trees came in all at once. We have some smallish Italian lemons and some HUGE Meyer lemons. I've already put up a large jar of preserved lemons but am at a loss as to what to do with the rest of all these damn lemons. Can I freeze the juice? Has anyone ever tried dehydrating lemon slices?

How do you identify which type of lemon it is.

The way I identified ours was the label on the tree when we bought 'em.  :D
Meyer lemons are huge, thinner skinned and have more and milder juice than any lemon I have ever had. We bought the others because they just looked interesting. They are small, knobby & fugly but taste like any typical lemon.

Last year i froze the juice and zest fom my lemons. I ended up using most of the juice in tea in the summer.

Make lemon marmalade and save them for gifts next year. or sell them in the office.

OR..Mail them to me. I love meyer lemon curd.

So, I guess the ice cream I was going to suggest is out then. I like mm's idea of freezing the zest and juice.

I bet they would make fantastic margaritas!

That is a GREAT idea!! Also drying them. I'll have to break out the dehydrator this weekend.

Some of the best margaritas on the planet are made with lemons instead of limes. 

That should solve the problem.   ;)

Our tree is about to drop a whole load of unidentified lemons. I think I will freeze them again since I am trying to lose weight and delicious deserts are out.
