RICE!!!

I have been on a rice kick lately.  Last night, I made a greek rice dish and it's amazing.  Any amazing RICE dishes you like?

The one I did cooked the rice in chicken broth, sautéed onions and garlic and fresh oregano.  Once cooked, you sprinkle lemon juice and zest over it and garnish w/ Feta crumbles.

My fav is Thai coconut rice. I also love biryani, and jeera rice (Indian basmati rice with cumin seeds). But my comfort food is sinangag, filipino fried rice cooked with about 10-15 cloves of garlic, sometimes more. Then topped with two beautifully fired (crisp edges) eggs.

we made a version of this stuffed-pepper biryani recently... using leftover roasted cauliflower and chopped almonds to stuff the peppers instead of the stuffing recipe... definitely a keeper recipe


also, I can never get enough risotto... my GF otoh is meh about risotto so we don't have it a whole lot

Ice Cream

Not a dish, but my favorite rice is bamboo rice. I like to experiment with different, "exotic" rice varieties.

This is delicious--lots of flavor! I've always made it with quinoa instead of rice, but would imagine it's great either way.

I love the "Wild Pecan" rice by Konriko. It doesn't have any actual pecans in it, but tastes a little bit sweet and nutty - so you would swear it does!

Also, I grew up thinking this rice dish was the best ever, and I confess that I still love it and make it once in a while. So good and stupid easy. Here it is, as emailed to me from my Mom.

1 onion, finely chopped
2 1/2 cups boiling water
1 cup Uncle Ben's rice (not the minute, of course)
4 beef bouillon cubes
2 tbsp margarine.....I would definitely use butter now!

Brown onion in butter;  In casserole, combine all ingredients and stir
Bake at 350 about one hour, stirring after 30 minutes.

That sounds good, but salty... 4 cubes of bouillon!

Hm, it makes a lot of rice - a casserole dish of it - and the bouillon cubes are so tiny, four never seemed like a lot to me! :D I guess it's distributed? Admittedly, I do like salty food. Big time. I salt this dish on my plate too.

The cubes that I know are one cube for 2 cups of water. I make 1 cup of rice with 2.25 cups of water all the time. I do not think it's a lot of rice.

The other night I made a rice dish from one of my favorite vegetarian cookbooks, "Vegetarian Cooking for Everyone" the name of the author escapes me.

It is basically a pilaf made with scallions, chopped spinach, dill, and lemon zest/juice

It is awesome.
