Vegetarian Sauces: any good ones?

Ice Cream

Last week, I was out of town and ate at vegetarian restaurants a lot. I noticed that they used sauces a lot, and that the sauces were delicious, but I have no idea what ingredients were used and they were very different from what I would normally use/make.

They were not highly liquid, kind of creamy substance.

So, if you know of any, I would love to see recipes.  I prefer non dairy and low in fat.

No, I am looking for something that works with rice bowls. Stir fry and pasta I am doing very well on, but what I got last week was quite different, like tahini or maybe tofu based?

They probably were sesame, cashew, or other nut butter based. Creamy without dairy and without fat is going to be tough. Seeds and nuts are fatty by nature.

The mention of tahini reminded me of an easy sauce I whipped up to drizzle over roasted cauliflower. I pureed garlic cloves, tahini, salt, parsley and lemon juice in a food processor and I thinned it with a bit of water. Don't ask me the amounts of each ingredient, I did it to taste. Hmmm. Maybe a bit of smoked paprika next time instead of the parsley?
