Breakfast ideas

I need some low cal breakfast ideas that I can make ahead of time and then heat up (or not) and eat on my way to work. They need to be something I can eat in my car so no utensils needed (as this is my habit and I doubt it will change). I often eat hard boiled eggs or toast but I need some new ideas.

I've been thinking of posting something similar. I often eat two hard boiled eggs and 22 almonds. It's very satisfying. Also a banana if I have one

What about breakfast burritos? They can be calorie bombs, but if you sautée a bunch of veggies with the eggs and go light on the cheese or skip it altogether they could be a good option that could be made ahead.

Or make some sort of baked casserole Those are easy to eat. I've diced up and cooked chicken sausage, peppers, onions etc and then put them in a dish with 8-10 beaten eggs and baked with layer of cheese. You can do ham and whatever veggies you want. I should do that next week actually.

That's not very safe. Just get up10 mins earlier and eat breakfast at home, or office.


Lately it's been 120 grams of cottage cheese topped with 50 grams of partially puréed frozen mango and 15 grams of sliced almonds for dh who's watching his diet. I started eating it too and found it very satisfying. It takes less than 10 mins to prep and eat.

You can make little egg "muffins" using a muffin pan. There are many recipes out there on the Internet.

I have actually made those quite often. I just need to find a way to make them not stick so badly. They destroy my pan.

Would cupcake liners make it better or worse? I'm sure cleanup would be easier, but they might make it harder to actually eat the muffins.

Either a silicone muffin pan or maybe they make silicone muffin cups, either one should help with sticking.

DON'T DO IT!

You can't get the damn paper off the eggs because they are too juicy. I think the aluminium ones would work though.

Line the cup with a slice of ham or turkey and then fill it with the egg. Or make what I suggested in a rectangular dish and cut squares. I spray w Pam first.

Do you like smoothies? I prep the night before and then stick in the fridge. All I have to go next morning is blend it for a couple of mins and it's done? I put rolled oats, banana, berries of some sort and milk.

Homemade granola bars or I make homemade Lara type bars. You can make a batch on the weekend and eat them all week for breakfast, though not sure how filling that would be.
