Spiralizing your veggies

Making vegetables fun is the whole point of the spiralizer, methinks.  Sweet potatoes in their natural state are pretty grim little obloids.  Spiralized sweet potatoes, on the other hand,  are a party looking for a place to happen.  :dance:

Really???? Love love roasted sweet potato ( called kumara here)

Or sweet potato and chipotle soup drool

Or baked in the skin with cream cheess

I pulled out my spirilizer to make a vegan meal for my SIL. We did zucchini with sautéed tomatoes and garlic. DS helped me and he did all the cranking. He had soooo much fun! He loved making the "noodles."
