I regularly try to discover a new ingredient and rotate it through my standard recipes.

This month its....BARLEY!

I'm looking at souod right now, because the weather calls for it.

Anyone have some good barley related soup recipes?

I made a duck and barley soup a few days ago, because I had a duck carcass to make broth with.  I stripped the meat from the carcass, then boiled the bones and skin up with the lemons from the cavity when roasting, a couple of bay leaves, and a shallot.

I pretty much sauteed onion, garlic, carrots (finely diced), mushrooms (halved and quartered), a sprig of rosemary, one dried arbol pepper, and a few peppercorns in duck fat, then put about 0.5 c pearl barley in and stirred until all the fat was absorbed, added a cup-ish of dry reisling (whatever was left in the bottle) and when that was evaporated added about 2 L of duck broth... to a boil then reduce to a simmer... when the barley was cooked and the soup looked done, I put the reserved duck meat in and heated through.

i am a big fan of scotch broth.  i far prefer the cooks illustrated recipe over all others, but i can't access it from work.

this one (from nyt) looks decent : https://cooking.nytimes.com/recipes/1014446-scotch-broth-with-kale

I have a barley salad recipe that people can't get enough of. It's not soup, but I'll dig it out anyway.

This is my go to Beef Mushroom Barley soup recipe

Also, I like half barley half brown rice instead of just brown rice. Barley is really good for you apparently.

Barley in veggie soup is really good, too.

If you google Barley recipes, the Barley (in the US anyway) Group has an entire page filled with recipes. I'll see if I can find it.

I started googling and the URL showed up for me.  :D

I've now made 3 separate veggie / barley soups in the past week. Can't keep up with demand!
