Cauliflower "fried rice"

I made this tonite and it was SO good. I was not expecting to like it. While I was cooking I did keep reminding myself that it will taste like cauliflower, not rice. So so good. I want another bowl but I need to figure the calories per serving so I don't go over my calories. Don't pay attention to the mess on the stove, it was a lot of cauliflower and it kept spilling out a little as I stirred it. DH loved it too.
We don't have pre-made cauliflower rice here so I just shredded a head and a half in my food processor. I put paper towels on a cookie sheet and spread out the cauliflower and left it there while I prepared everything else.
