office potluck suggestions here

I need some new ideas for office potluck contributions.  I have two coming up in the next couple of weeks and am not feeling it.


Happily taking suggestions. My back up plan is to buy a crate of clementine oranges...

we play a risky potluck game here, no sign-up sheet, no coordination of dishes... so the field is wide open

the last potluck we had was an indian food theme and I made wild grouse biryani... I've also done chinese tea eggs, spiced beetroot cake with toasted marshmallow frosting, turnip green and soba noodle salad

inspired by MM, I am toying with the idea of a molded jello of some sort

I was going to suggest Indian since it can be fun to prepare and serves up better the next day.  All casseroles do too.  But your potluck game is stronger than mine.

What's seasonal there right now?  You could make a clementine cake.  Or an olive oil cake.  or both.

Also one of our local faves makes the most delicious Spanish-style kale salad and the exact recipe is on the web.  And easy:

is that the beaujolais nouveau salad??  :) I don't know how it would go over here (though kale is definitely in season), but I am glad you posted the link.

i have taken a "southwestern" salad to the last few potlucks i've attended (mostly because it was a hit the first time around).

dice 2 sweet potatoes.  toss with a neutral oil, salt, pepper, chipotle powder.  spread out on a baking sheet and roast until cooked through and crisp on the edges.  let cool.
toss with arugula, thinly sliced red onion, chopped tomato, black beans, crumbled cotija, sweet corn (optional).  dress with a vinaigrette of neutral oil, lime juice, pinch of sugar, salt, pepper, minced garlic, cumin, oregano.

ihop

DH's team is supplying breakfast to the building next Tuesday.

I will make it Monday night but it can be reheated at the office.

This is my go to for pot lucks. It's super easy and people from all walks tend to like it. I call it trailer trash casserole in my head.

Korts makes a thing she calls sushi rice. I'll see if she can get on and send it. It's good. It's a mix of krab, rice, sauces, and some other stuff that you bake.  People fold a scoop into seaweed squares. Very good.

I am definitely interested in hearing more about the sushi rice casserole.

I like this pumpkin bundt cake. I've never made the caramel sauce, though. I just dust with powdered sugar and serve.

My dad gave me a recipe for a breakfast casserole with prosciutto, fresh basil and tomatoes. He said it is delicious.
