Ice Cream

I accidentally posted a vegetarian recipe in the chopped thread that was quite good, if anyone is interested.

I made buffalo cauliflower wings yesterday per bf's request. Took a few recipes and made my own. I battered them and air fried them and then covered in the buffalo sauce. He was really impressed with them.

i have a fabulous recipe for beer battered portobello mushrooms which is just out of sight.  i served them at a party and they disappeared (even the affirmed meat eaters were impressed).  i'll find it.

4 or 5 large portobello mushroom caps, cleaned, gills removed (you must remove the gills)
one 12 oz bottle of pilsner or lager
1.5 c a/p flour
1.5 tsp powder
.5 tsp salt
corn, peanut, or olive oil

slice each cap into 1" wide strips
combine the dry ingredients and whisk in the bottle of beer
heat the oil in a dutch oven or deep fat fryer to approx. 375°
dredge the strips in the batter and fry until golden
drain on paper towels
serve with chipotle mayo (or thai ketchup - our preferred method of consumption)

This was what I consider a free recipe. I happened to have everything in my pantry just waiting to be used. The celery was a little weird but otherwise I think I'd make this again.  It was super easy and fun to try out some new techniques.

Yum, I'm stoked for those shrooms.

I made tuna noodle casserole tonight because I wanted some comfort food and shockingly everyone in my family ate it AND had seconds.

Just going to jump in and give another shout out to diablita and the sheet pan chili lime shrimp recipe she posted. We bought the jumbo bag of shrimp from Costco and their mini peppers and this makes for such an easy and amazing dinner. All the other ingredients are pantry basics and it comes together in 10min. We put it over quinoa tonight instead of tortillas. So good! It's definitely going to be a staple for us.

Hey, I was wondering if anyone would be interested in a little zoom session to make a dish together?  Thinking I could walk you through my ceviche method, for example, which isn't a wrote recipe but more like a method and could be done in less than 30. Would anyone want to do that?  And maybe have something they would share too?  If we planned ahead it would give time to get the ingredients.

Since I mentioned Tori Avey in another food thread I thought I'd post one of my favorite of her recipes. It just requires fish and a few spices you probably have at home that combine super well:

i am making curried root vegetable pie for tonight's supper. 

we have a picked over roast chicken in the refrigerator; i will throw that into a stockpot and make stew tomorrow.
