So I have never had a tater tot casserole but i love tater tots and want to make one. Vegetarian. GF meat substitutes will be considered. Am I best making a breakfast one? Some of the vegetarian non breakfast ones were basically cream, sour cream, mushroom soup and 3lbs of cheese, that is not appealing.

OK this probably isn't what you had in mind, but it is AWESOME.

Indian food is often veggie. I'm sure you could use a meat substitute or just skip it entirely and it would still taste great.

Possibly lentils!

I bet mung beans would be really good in that recipe.

I think a breakfast casserole might be the way to go. I'm kind of cracking up at your "yuck to cheese and cream" comments though. Most casseroles are just that-- cheese and cream (of whatever) and carb bombs with some meat and maybe veggies thrown in.

If the cream of mushroom soup, ground beef, ranch packet, topped with tots & cheese doesn't appeal to you, what sort of flavor profile are you looking for?

I think you could do veggie chili or whatever you might fill a pot pie or shepherd's pie with. Lots of options.

A breakfast one would be good.  There are some very good vegetarian sausage crumbles on the market.  (By good, I mean, the taste and texture are very close to that of real meat sausage - although the spicier ones are better.)
Ellen stole my joy and I want it back!

Some of them were ONLY cream and cheese, nothing else.

OMG, that looks great!  Yes, you could easily omit the meat in this.

Tater tot breakfast casserole was a success. Sauteed onion and green pepper and veggie sausage. Put in casserole dish, added 8 eggs + 1/2 cup milk, sprinkled with cheddar, topped with tater tots, another sprinkle of cheddar and baked. AH-MAZING
