I'm making the veggie patties right now. I decided to make the filling tonight and the patties tomorrow or the day after. The filling is goooooooood. I think it would be great as a stew over couscous or rice (maybe with some kind of bean added) as an alternative to pastries.

I like cabbage thoroughly cooked so I added it earlier in the process. I let the filling sit overnight. I also doubled the spices and the lemon juice. The coconut flavor is subtle. This is a pretty rich dish. I'm glad I only made one batch because we ate them all last night. DD didn't care for them- no shock there.

I'm glad you posted this, I forgot how good those patties were, dd2 will be home in a couple of months and dd1 just went vegetarian

We have a dozen or so people coming this weekend.  A few are vegetarian and at least two are vegan.
I thought it was in this thread, but I think gebuh posted a quinoa/sweet potato/black bean chili recipe that I'm going to make.  I'll likely add more seasoning.
Also white bean tortillas.  And garlic hummus.
I am starting with dried beans and will cook them all in the pressure cooker tomorrow.

I hope it all comes out good!

DH is going to slow cook a brisket for the meat eaters.

Yes, that's it.  I'd bookmarked it along with a couple other recipes (the white bean quesadillas was one) and am going to make it tomorrow morning.
We just finished cooking all the beans in the pressure cooker this morning.

I came back in here to find the hummus thread.  :)

I was reviewing some of the recipes and wanted to add something about egg replacement.  For the longest time I used ground flax seed as an egg replacer, but last year I tried chickpea flour and haven't looked back.  It is much better, no color issues or the occasional sliminess from flax seed.  1/4 cup chickpea flour with 1/4 cup water replaces one egg.

not at all - I use it for cornbread, pancakes, brownies, etc and it works great.

Yes, but not all recipes with it. I do not even use the bobs red mill gluten free AP mix because all I can taste is the chickpea flour.  I hav thrown a handful of recipes in the trash due to the chickpea flour overpowering it, but I have a few recipes I always use it in with success.
