Thanksgiving Dishes. HELP!

Uh, hello! Why has no one suggested sweet potato casserole?! With extra marshmallows! :)

**Seriously though, I make my SPC with a pecan mixture on top. Yummy!

I remembered an awesome dish that I love and is distinctly me.

Sauteed Kale and Parsnips.

I might make an additional side with sauteed or roasted brussel sprouts.

MG- I brought my sweet mash last Passover, and I don't want to be the guy who can't mix it up. ;)

Easy and tasty broccoli and cheese casserole (my kids, now in their 20s, still request this every year)

Two large frozen bags of broccoli
About 1.5 cans of cream of chicken (or cream of whatever) soup
a little milk to mix with the soup
Box or bag of croutons (we like the cheese & garlic)
and one package of sliced american cheese

Put the frozen broccoli in a 9 x 13 (or bigger) dish or pan
Mix the soup with enough milk to make it pourable, and then pour it over the broccoli (usually 1.5 cans is just right)
Put sliced cheese over top
Top with croutons
Cover with foil and bake at 350 for about 45 minutes, then remove the foil and bake another 15 minutes.

That's it. For those of us that aren't very inclined to compete with chefs and foodies, this works great.

I made two because my mom wouldn't eat it if it had garlic, and my girlfriend can't really eat things with oil right now- she's having stomach issues.

BUT, RA...

I take the kale and chop it coarsely. I leave out the stems which tend to be bitter.
I chop parsnips into small cubes
I heat an element to high
<Traditional Option>
Drizzel 1-2 table spoons of olive oil to coat the pan and add minced fresh garlic. Fry until garlic is cooked
</Traditional Option>
Add 2/3 cup vegetable stock.
Toss all kale into a fry pan
Throw in parsnips
Lid it tightly for 5 minutes.

Stir and reduce heat to simmer for 5 minutes.
Season TYT (Sea Salt, Worcestershire sauce, Black pepper, crushed chiles)
Simmer until liquid is evaporated.

Things to remember: If your kale is bitter, season it more. Especially salt/stock.

Sounds delicious! Greens can be super bitter this time of year, for sure. I like to buy the pre-washed bags of mixed greens but they are too hit or miss right now. After things start freezing the greens get much less bitter.
