Thanksgiving!

What are you cooking? Are you cooking anything that can be done a day or two ahead of time? Or even earlier and frozen?

We love Thanksgiving food, and for the past few years I have cooked us a little thanksgiving dinner. This year my due date is on the 20th. Dinner will be at my step-sister's house but we're not going. I told DH that if I don't have a c-section, we can still do something for us, maybe even the weekend after thanksgiving. A lot of it is easy so he can do the hard work and I can help with a few prep things. He doesn't like turkey so we'd just roast a whole chicken. Easy.
Of course, this all depends on how I deliver and how I feel.

I can't believe you're so close!

I'll be out of town the weekend before Thanksgiving and we're having friends over for dinner who really wanted to bring a smoked turkey so we're letting them.  It will be odd not cooking a turkey for the first time in many year but kind of great.  Not sure what else I'll make yet, but will definitely have the usual cranberry sauce (w/ apricots), mashed potatoes of some kind and definitely brussels sprouts.

quick, someone post their sweet potatoes with marshmallows and green been casserole recipes so we can get it over with.

last year we went to the vegan buffet restaurant and it was great. Got to love Chinese vegans making Thanksgiving dinner :D I loved not having to cook and clean and dealing with leftovers. Unless we go to DH's cousin's, i think we are going back to the restaurant again.

I am cooking for the first time this year. Antags mom and stodad are coming as are my parents and brother. I think I will go traditional with turkey, stuffing, mashed potatoes, gravy, green beans, cranberry sauce, rolls, and pie.

I made sweet potato casserole with the marshmallows on top the first year I cooked. I just thought that's what I was supposed to make. We have graduated from marshmallows to toasted pecans on top. :)

I just received the new SmittenKitten cookbook and there's a recipe in it for a swirled pumpkin cheesecake.  It's kind of a half cheesecake, half pumpkin pie thing and sounds very balanced and tasty.
I'm definitely giving it a try.

I made a vegan one and it was really good. theppk.com has a great vegan brownie pumpkin pie that anyone would love AWESOME.

My favorite dessert is Cooking Light's pumpkin pie cake, it is a layer cake (pumpkin) with a delicious cream cheese frosting. Always a winner. We do no nuts on it.

There's a great make-ahead recipe for Mashed Potatoes on the Pioneer Woman website.  I made them last year and they were amazing.  Not that you are looking for that, but it may help make the actual day less stressful.

Is that the one with cream cheese? I think I made something like that and OMG they were good!!

I love cooking thanksgiving dinner with all the goodies, but... No company this year. It seems like too much for four people. :(

Aww, do it. I do it for 2 people. Not even for Adam anymore because he won't eat any of it. When he was 1 I think, the first time I cooked, he ate a little of everything. Now I'm sure he wouldn't touch any of it except for the bread.

we've done it for three and DH is the only one who eats turkey :D Go out to dinner, it is DA BOMB!

Its not...just do a small turkey.

I once made a full thanksgiving dinner for just myself.
