Some thing I can do with half a head of cabbage... easy?

And I don't think I can make anything stuffed because of the way I cut it in half.. And you know me, it has to be easy :)  And preferablly healthy and low fat...

I slice it into wedges, brush on a bit of olive oil & salt and then roast at 350 for 20-30 minutes or so or until brown.  The outer leaves get crispy and the inner leaves are soft and sweet.

I slice it into rounds (or half rounds), place on cookie sheet, spray it with oil and sprinkle it with salt, garlic powder, and smokey paprika and roast until it starts to get crispy around the edges. YUM.

those sound good.  I usually just slice and eat raw.  I love cabbage.  Is yours red or green, MOS?

I can't remember if you bought the instinct diet book, MOS, but I think you did. She has a couple of really good recipes in there. I especially like "hellen's red flannel cabbage" or something like that. You can use red or green. It calls for 1/2 head of each, I usually do a whole head of one or the other, but it makes a huge amount, so you can definitely halve it. I freeze it in individual 1 cup portions as a quicky, tasty, side vegetable. It's also very good with a couple of over easy egs on top and a slice of whole grain bread.

Cabbage also lasts forever and ever and ever. So don't worry too much about using it up right away.

Raw cabbage is supposed to be good for ulcers so I've been putting some in my smoothies...

I ended up roasting it like Caito suggested.  I  may have used too much olive oil, but it was delicious!  I ate almost the entire half a head myself.

Speaking of cabbage...how many outer leaves do you peel off before you feel comfortable eating it without washing?

without washing it???  no señor, I do not eat these things without washing them:

1. bugs can still get in there
2. farm workers have to pee somewhere and they're not hermetically sealed

Ok, so just holding the whole cabbage under running water wouldn't do the trick...if you are cutting off chunks of it, would you then put them in a colander and rinse them that way?

But really, those leaves seem to wrap so tightly that I don't see how bugs or farm worker pee could get inside the first few leaves...

please don't underestimate the power of the farm worker pee  :)

yes, I wash the pieces in a colander.  it may be overkill but I feel better about it.
