Low sugar cookies or other yummy things for diabetics - recipes needed

Does anybody have any tried-and-true recipes that are good for diabetics?  Specifically I would like desserts or cookies or other yummy things.  Thanks.

Here's one that looks decent.  I would do cashews instead of walnuts because of allergy.  Also when they say "regular oats" which do they mean?  I have "old fashioned" oats in the cabinet.

    2 cups uncooked regular oats
    1 cup raisins
    1 cup chopped walnuts
    1/2 teaspoon salt

    1 1/2 cups mashed banana (about 3 medium)
    1/3 cup vegetable oil
    1 teaspoon vanilla extract

Preparation

1. Preheat oven to 350°.

2. Combine first 4 ingredients in a large bowl; stir well. Combine banana, oil, and vanilla; stir well. Add banana mixture to dry ingredients, stirring to combine. Let stand 15 minutes.

3. Drop dough by rounded tablespoonfuls onto ungreased baking sheets. Bake at 350° for 15 minutes or until lightly golden. Transfer cookies to wire racks; cool completely.

The one I was going to post is very similar. The come out tasting like banana bread.

Yes... 

The only difference between old fashioned oats and the rolled oats is the how much they have been ground, old fashioned oats are a bit bigger, if I'm remembering right. 

And who knows what they mean by "regular" :D 

I make a similar recipe with oats and it's fine.  I use yogurt instead of oil, but that's about the only difference.  They will be a bit denser than a traditional muffin, but tasty.

my diabetic aunt dips chunks of banana in dark chocolate then freezes them... chocolate covered banana bits, she calls it.

I keep seeing this thing on pinterest where you take two banana slices with a bit of PB in the middle, and dip it in chocolate and then freeze.  I could eat a million of those.   :nono:

I am not a fan of fruit and chocolate together.  But nuts & oats works.  I know, they're not for me...but how could I make and give if I don't like?

My parents eat apple pie quite a bit. If you use sweet apples you don't have to add any sugar. She often adds raisins to sweeten it up a bit.

What are the sweetest apples?  I'll also be making applesauce to bring, tomorrow, and I have ... I think I have a giant bag of gala apples? Maybe fuji.  Can't remember.

Those should work. I would not recommend granny Smith type apples for a sugar free pie.

I feel the same way. The first ones you posted would not be for me because I dislike walnuts and raisins. The ones I posted you could leave out the chocolate if you like. They come out tasty either way. The thing I like about them is that they are GF, "sugar free" (esp if you leave out the chocolate), could be vegan, etc... but they taste like legitimate cookies.

I do have a recipe at home for snickerdoodles that is pretty good and good for blood sugar stabilization but they have some funky ingredients in them... like corn bran. Not sure if that would be of interest to you or not.

Ha! RA, I'm not including the walnuts or raisins.  Thought I would chop up some cashews though.
