My grandma and mom make the best cucumber thing ever.

Cukes (3) & onions (if you like them), miracle whip, sugar, and vinegar.  Salt & Pepper.  Mix up, let it sit in the fridge and get awesome.

I can eat many cucumbers worth of this in one setting.  It's terrible. 

Shit, now I need to track down the exact recipe.  I must ask my mom for it twice a year, I don't know why I can't remember it.

I like to do a cucumber and tomato salad, with feta on top.

I recently learned that you can freeze cucumbers, though you need to brine them first: http://www.thriftyfun.com/tf420799.tip.html.

I like them in SE Asian dishes, either in a salad like the beef and cucumber salad found here http://jessthomson.wordpress.com/2007/06/15/everybody-loves-fish-sauce/ or added in to stir fries, which sounded strange at first but was really good: http://thespicedlife.com/2009/02/so-you-think-youve-had-sweet-and-sour-thai-sweet-and-sour-with-pork.html.

I make a similar recipe but with plain yogurt and dill. You can probably sub yogurt for mayo in most of those kinds of recipes to reduce fat/cals.

my dad makes quick pickles he calls "cucumbers and onions in vinegar"; slice cucumbers and onions and toss them with a bit of sal, pack them in a mason jar, fill jar with vinegar, put them in the fridge and leave for a few days before eating

garnish gin & tonic with a slice of cucumber (BEST gin & tonic ever, trust me)

sweet pickles, bread & butter pickles, dill pickles

relish

cucumber & cream cheese sandwiches, or one-up that with the Cucumber Club (thanks, Albion Hotel!): dark rye, cream cheese, cucumber, light rye, tomato, lettuce, more cream cheese, dark rye

salad nicoise (okay, the cucumber is controversial, but that's how I make it)
