Black bean vegan chili

I am making that black bean vegan chili of Meri's and the sweet potatoes are still really hard. How Long am I supposed to cook it so they soften up?

How big we're they cut? I make mine less than 1/2 inch. 30 minutes?

I bought mashed sweet potatoes in the store, and plan on making soup from that, with black beans.

They weren't huge but I just added more water and kept cooking it. They finally started to soften. It wasn't bad. I am eating it for lunch all week and figure chili is always better then next day and the potatoes will soften when I reheat it. New flavor combos for me but interesting. Quinoa is interesting as when I've had it in the past I wasn't a huge fan but I do love black beans and sweet potatoes together.

Chili was much better on day 2 than expected. Except the amount of fiber has had me doubled over in pain all afternoon. I eat fiber, but this might have pushed my limits. Sorry for the TMI!

Lol! I eat a lot of beans so my body does not get phased by those things.

This recipe is one of my favorites. And yes, it is more nummy the second day.
I do a 30 minute bake of the sweet taters, then let them cool completely before peeling & chopping.
(They do not get mushy when following the recipe after this step.)
I also add red pepper flakes and a dash of Sriracha hot sauce. :rockon:

Speaking of fiber (wait for it)....
My husband's mom, his bro, and one cousin are coming over on Xmas day evening for a very casual "picnic" supper and gift exchange.

I'll be serving the vegan chili as a side dish, to go with garden salad, hummus, chips, build your own sandwiches on hard rolls, and some wonderful other items.

These people, I swear, eat NO fiber. Zero. None. Nada. They poop about one a week.
Even though I encourage/force dh to eat more fiber, he eats nothing close to what he needs.
He rarely poops. Freaks me out.

This family is beyond anal-retentive. Hahahahahahaha! :roll:

So I can image what even the smallest portion of this chili will do to them.  :sidesplit:

It can be quite painful if you are not used to fiber.  Do you really want to do that to them?

I am still eating it but ready to toss it at this point. It was good and took a bit to get used to. Other than the first day my tummy handled it well.

I adore that chili but I add some extra spices to it along with a tiny bit of sour cream and chopped cilantro at serving time; however, my belly takes a bit to ahem...adjust...
