Anyone try any variations of these, have a recipe? I think I am going to find one and try it for superbowl.

I posted one recently for eggplant sliders.  I'm making them again for sunday.

pshaw... my husband would run away screaming if he found an eggplant anywhere on his plate... :D

I did them the same way, use a really good sauce and purge the eggplant first.  These would be perfect for leftover spaghetti sauce.
